This one I came up with the other day but refined a bit this morning. It's perfect for an early-morning breakfast (when your belly's still waking up and not ready for a full meal), a tasty snack, or even dessert. Why roasted flaxseeds, you ask? They're rich in Omega-3's, lignens, and dietary fiber. Mmm... fiiiiberrr... Plus, they add a great crunchy texture enhanced even further with a chunky-style peanut butter. Trader Joe's also offers a super delicious peanut butter WITH flaxseeds, but having just a bag of the roasted buggers on hand means you can add them to salad dressings, yogurt, granola, fruit smoothies, cookies, brownies, sauces, soups... yup, just about anything.
For 1-2 servings/approx. 20 oz., you will need:
- blender
- approx. 1 tray of ice cubes
- 1 1/3 c. rice milk (organic, unsweetened - not vanilla)
- 2 Tbsp peanut butter (TJ's crunchy salted)
- 1 Tbsp roasted flaxseeds
- 3/4 tsp vanilla
- 1/2 tsp pumpkin pie spice
- 1-2 Tbsp honey (depending on the pleas of your sweet tooth)
- 1 tsp cinnamon
Blend all ingredients.
Yum.
